Substituting one sweetener for another
Swapping sweeteners isn't a one-for-one trade, because they differ in sweetening power, moisture, and acidity. This converter works by volume ratio — cups of the alternative per cup of sugar — which is how most baking substitutions are quoted. Honey, for instance, is sweeter and wetter than granulated sugar, so you use less of it and then pull back on other liquids to compensate. Each pairing here comes with a usage note for exactly that reason.
Moisture is the variable that catches people out. Liquid sweeteners — honey, maple syrup, agave, molasses — add water to a batter that granulated sugar doesn't. The rule of thumb when replacing sugar with a liquid sweetener is to reduce the other liquids in the recipe by roughly a quarter-cup per cup substituted, and to lower the oven temperature by about 25°F since these sugars brown faster. Skip those adjustments and you get a dense, dark, under-set result.
Acidity matters too. Honey and molasses are acidic, so when they replace a meaningful amount of sugar you may need a pinch of baking soda to keep the leavening balanced. None of this makes substitution risky — it just means a swap is a small recipe edit, not a drop-in. The converter gives you the starting amount; the usage note tells you what else to nudge.
Dry-for-dry swaps are the easy ones. Coconut sugar, light brown sugar, and turbinado all go in at roughly a 1:1 volume ratio for granulated, changing color and depth of flavor more than structure. It's the move from a dry sugar to a liquid one — or the reverse — that forces the moisture and temperature adjustments above, because you're changing the recipe's water balance, not just its sweetness.
Worked example
A recipe calls for 1 cup of granulated sugar and you want to use honey.
- Honey is sweeter than sugar — use about ¾ cup per cup of sugar
- Reduce other liquids by about ¼ cup and drop the oven ~25°F
→ ¾ cup honey, less ¼ cup liquid elsewhere, baked a little cooler.
